Nana Ice Cream

One of the things I love about breakfast is discovering new ways to eat fruit. Don’t get me wrong, I love eating it plain, but on some mornings there’s not enough time and I’d much rather have something that’s on-the-go friendly AND healthy. Flourishing Health blog has really inspired me to be creative with food, especially fruit, and put my own spin on recipes. If you’ve never tried nana ice cream, you must! I know there are actual nana ice cream makers out there, but it’s really unnecessary. Just a food processor or high speed blender will do!

Serves 1, Cook time: 5 minutes

Ingredients:

3 bananas, sliced and frozen

1/4 cup of frozen strawberries

1 handful of frozen raspberries

1/2 tsp vanilla extract OR pinch of pure vanilla powder

1/4 cup unsweetened almond milk

Directions:

1. Place all ingredients except the almond milk in the food processor/high speed blender.

2. Blend on high until only small pieces of fruit are visible.

3. Carefully lift the lid off of your processor and slowly add the almond milk, while blending on high. You may have to stop to scrape down the sides, but let the processor do most of the work.

4. Once it’s blended into a creamy consistency, turn off the processor, spoon the ice cream into a bowl, and eat immediately! I topped mine with shredded coconut and leftover frozen raspberries and it’s AMAZING!
